Pies
The “tarte tropézienne“ is composed of two layers of pastry embracing a generous filling of light cream. The pie is topped with pearl sugar prior to cooking.
Pearl sugar is often appreciated on apple pies, or pies with cherries or rhubarb.
Jelly rolls are cakes made of a thin sheet of sponge cake, spread with jam or jelly and rolled up. This type of cake is sprinkled with pearl sugar as decoration after the “abricotage” so as to ensure that the cake does not stick to the packing.
