  • 340g butter
  • 200g whole eggs
  • 10g water
  • 600g flour
  • 6g cinnamon
  • 4g sodium bicarbonate
  • 4g salt

The ingredients must be at room temperature.

    Put the butter, the brown sugar, the cinnamon, and the salt together. Mix them for +/- 3 minutes at average speed.

    Gently add eggs and water and mix for +/- 2 minutes at average speed.

    Add the flour and the sodium bicarbonate. Mix for 40 seconds at low speed and 40 seconds at average speed.

    Place the cookies directly on a baking sheet or a silicone sheet using a pastry bag (10g per cookie).
