Couplet Sugars white pearl sugar is moisture resistant. It does not melt when placed on moist products such as brioches. It also keeps its white colour, even after baking. Coated pearl sugar is also an ingredient of choice for the decoration of (light soufflé pastries).
The larger pearls (C40-C45-C50) in pearl sugar are used in the dough to make brioches and other light soufflé pastries after an initial rising.
Optimal dissolving time and hardness: the pearls do not melt entirely and hence bring a sweet and delicious crispy texture to waffles, brioches, buns and sweet breads.
